Cook the @eatbanza shells according to package instructions.
In a large skillet, heat the olive oil over medium heat.
Add the diced onion and sauté until translucent, about 5 minutes.
Season with salt, pepper, Italian seasoning, Calabrian chilies (or red pepper flakes), and smoked paprika.
Add the ground beef and cook, breaking it up with a wooden spoon, until browned, about 5-7 minutes.
Stir in the tomato paste and minced garlic, and cook for 1-2 minutes.
Add the cooked shells, cottage cheese, milk, and up to 1 cup of beef broth (depending on desired thickness).
Stir to combine and let simmer for 5-10 minutes, until the sauce has thickened.
Remove from heat and stir in the shredded cheddar cheese.
Serve immediately, garnished with fresh chives.
