Cheddar Bay Biscuit Chicken Pot Pie
  1. Cut two chicken breasts in half and season with oil, onion powder, garlic powder, paprika, salt, pepper, and basil

  2. Cook chicken in a large pan on both sides until internal temperature reaches 165 degrees

  3. Set chicken aside and shred

  4. In the same pan, add 4 tablespoons butter and 1 diced onion, cook until translucent

  5. Add 3-4 chopped celery stalks and 3 diced carrots, season with salt and pepper

  6. Cook for 5 minutes, then add 5-7 minced garlic cloves

  7. Add ½ cup flour and cook until white is not visible

  8. Add 2 cups chicken broth and 1 cup heavy cream

  9. Add ½ cup frozen peas and ½ cup frozen corn

  10. Cook for 5 minutes, then season with thyme, 2 tablespoons chopped parsley, and chicken bouillon seasoning

  11. Add shredded chicken to the mixture

  12. Line a pie dish with one sheet of pie crust

  13. Add chicken pot pie filling to the crust

  14. Prepare Cheddar Bay Biscuit mix according to box directions

  15. Add large dollops of biscuit mixture around the top of the pie and fill spaces with extra filling

  16. Bake at 375 degrees for 40-55 minutes

  17. Brush butter sauce from biscuit box over the top of the crust when done

  18. Serve and enjoy
