Creamy Lemon Herb Chicken Thighs with Pasta & Broccoli
  1. Pat dry and season both sides with salt, pepper, and garlic powder.

  2. In a large skillet, heat olive oil and butter over medium-high.

  3. Add chicken thighs and cook 5–6 minutes per side, until golden and cooked through.

  4. Remove to a plate and tent loosely with foil.

  5. Lower heat to medium. Add broth and lemon juice to the skillet, scraping up the golden bits.

  6. Whisk in cream cheese (or pour in cream) until melted and smooth.

  7. Stir in herbs and lemon zest. Simmer 2–3 minutes until slightly thickened.

  8. Return chicken (and any juices) to the pan. Spoon sauce over the top and simmer 2 more minutes.

  9. If the sauce gets too thick, splash in a bit more broth.

  10. Toss your pasta with some of the sauce, serve chicken on top, and add broccoli on the side (or toss that in too if you want everything coated).

  11. Finish with a squeeze of fresh lemon or a sprinkle of Parmesan.
