Put the water, honey, milk, and butter in a microwave bowl and heat for 1 minute or until the butter and honey are melted and easy to mix in
Add the warm mixture to your mixing bowl and add in your sourdough starter and mix in
Add in the flour and yeast and mix to combine
Add in the salt and knead for 3-4 minutes
Transfer the dough to an oiled clean bowl, cover and let rise for 30-45 minutes until it's about doubled in size
Prep your 9x13 baking pan by oiling or spreading butter on the bottom and sides
Divide the dough into 2.5 ounce balls, shape and fill the pan to make 15 rolls
Cover and let rise for another 30-45 minutes until they've doubled in size
Preheat your oven to 400 degrees while the rolls are rising
Bake at 400 degrees for 25-30 minutes or until they are golden brown on top
As soon as you take the rolls out of the oven, rub or brush butter over the top
Serve warm or let cool completely and store in an airtight container for the next day
