    Assemble Salad

  1. Rinse your lettuce clean then THINLY SLICE. Dry well in your salad spinner.

  2. Blend the feta, lemon juice, olive oil, salt, and pepper into a dressing consistency. Add water if too thick.

  3. Place the first 4 ingredients in a large bowl and toss with dressing. Pour the dressing over the salad.

  4. Toss all together and massage/scrunch the greens with your hands to infuse with the rest of the ingredients and break down its rough characteristics.

  5. Assemble Pitas

  6. Mix ingredients (minus pita) together using hands and form into 4 large meatballs.

  7. Roll out your flatbread/pita to make it thinner.

  8. Place 1 meatball onto pita and spread out using fingers. Leave a half inch or so rim clear.

  9. In a hot pan, add oil and place pita on pan, meat side down. Cook until meat is fully cooked. Flip and cook the bread side to get it warm and a little toasted.

  10. To serve, add salad on top of pita. Enjoy!
