Adzuki Bean Salad
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. To the lined baking sheet, add the sweet potato cubes, then drizzle with olive oil and mix to evenly coat. Season with salt and pepper to taste.

  3. Roast in the oven for 25 minutes or until the sweet potatoes are golden and fork-tender.

  4. Make the farro according to the bag instructions.

  5. To a large bowl, add the cooked farro, cabbage, beans, carrots, edamame, cashews, cilantro, and dressing. Toss the salad. Top with sliced green onions as garnish, and enjoy!
