Mix cream cheese, sugar, egg yolk, vanilla, and lemon juice until smooth and creamy. Set aside.
Have your filling and blueberries ready before working with rice paper.
Whisk egg and milk in a wide dish.
Dip one rice paper sheet in the egg wash for 2–3 seconds, then lay it on a clean surface. Dip a second sheet and layer on top.
Fold edges inward to form a square.
Add about 2 heaping tablespoons of cream cheese filling, spread slightly, then top with blueberries.
Fold one corner over the other and lightly spray with oil.
Air fry at 375°F for 8–10 minutes or until golden and crispy.
Let it cool, then dust with powdered sugar.
