1️⃣ Preheat oven to 350°F / 175°C. Grease and parchment-line a 9×5 loaf pan.
2️⃣ Make apple filling. Cool completely.
3️⃣ Make streusel and chill.
4️⃣ Whisk dry ingredients in one bowl.
5️⃣ Whisk discard, applesauce, milk, eggs, molasses, oil/butter, vanilla (and orange zest if using) in another bowl.
6️⃣ Combine wet + dry gently. Don’t overmix.
7️⃣ Fold in half the apple mixture and the chopped candied ginger.
8️⃣ Pour half the batter into the pan. Spread remaining apples over batter. Add remaining batter on top.
9️⃣ Sprinkle streusel thickly over surface.
🔟 Bake 50–60 minutes. Tent foil if over-browning. A toothpick should come out mostly clean.
