Take the beef out of the fridge for at least 30 minutes before cooking.
Preheat your Airfryer to 210 degrees.
Brush the beef with some olive oil and make a herb rub out of salt, pepper, garlic powder, rosemary and thyme, and rub that on too!
Pop the beef into your Airfryer (I used a liner) for 15 minutes at 210 degrees.
Take it out, flip it, lower the temp to 180 degrees and cook for another 15 minutes for a perfect medium roast beef.
Leave to rest for 20 minutes and then slice up and pour over the Airfryer juices.
