Whisk everything together until it forms a smooth, lightly thickened mixture
Add the sweet potatoes to the bowl and coat them evenly, making sure the flat side is fully covered
Line a baking sheet with parchment paper and place the sweet potatoes flat side down
Bake at 400°F for 50-55 minutes, until the bottoms are deeply caramelized and the centers are tender
Let them cool for at least 10 minutes before moving them to allow the caramelized layer to set and release clean from the pan
