Roast beets in aluminum and carrots in avocado and salt & pepper in the oven until cooked through
Make dressing with, shallot chopped well, olive oil, chopped dill, lemon juice, garlic, s&p, mustard, and honey.
Once cooked, Chop beets up to same size as carrots. Mix roasted carrots, beets, and dressing together warm or cold.
Add roasted almonds and pumpkin seeds and feta all together when ready to eat.
