Yamitsuki Shio Cabbage
  1. Remove the external leaves from the cabbage.

  2. Chop the cabbage in half, and into wedges. Chop into squares/bite sized pieces. Discard the core and base.

  3. Transfer to a colander and rinse under cold water to get rid of any dirt.

  4. Shake to get rid of excess water and dump into a towel. Thoroughly pat dry.

  5. Place the cabbage in a large bowl. Add 1 large pinch of salt and massage with your hands to help break down the cabbage. Let it sit for 5 minutes.

  6. Using a microplaner or oroshigane, finely grate your garlic.

  7. Using a suribachi, mortar and pestle, or coffee grinder, grind the sesame seeds and add them to the bowl with the cabbage along with the grated garlic, ground black pepper and sesame oil.

  8. Use your hands to massage the cabbage and season. This can be eaten right away!
