Blend together the milk, cottage cheese, grated carrot, maple syrup, cinnamon, and (if you have it) vanilla extract.
Add in the chia seeds — either blended for a creamy texture or stirred in after for a more traditional chia pudding feel.
Transfer into two glasses or jars and let set in the fridge for at least 2 hours.
Top with Greek yogurt, a drizzle of maple syrup, and a sprinkle of chopped nuts before serving.
