Place a glass into a slice of tomato and spin around to create a ring, then remove the middle
Set aside the tomato rings
Chop the remaining tomato finely and add to a mixing bowl
Chop fresh chives and add to the bowl
Add 2 tablespoons of all-purpose flour to the mixture
Pour in 2 large eggs and break up the yolk
Season with salt, black pepper, and garlic and herb seasoning
Mix all ingredients together until well combined
Place tomato slices evenly spaced in a pan on medium-low heat
Pour egg mixture into each tomato slice
Cover with a lid and cook for a couple of minutes
Flip the patties over and cook for another couple of minutes
Transfer to a plate and garnish with fresh parsley
Serve and enjoy
