Tomato Egg Patties
  1. Place a glass into a slice of tomato and spin around to create a ring, then remove the middle

  2. Set aside the tomato rings

  3. Chop the remaining tomato finely and add to a mixing bowl

  4. Chop fresh chives and add to the bowl

  5. Add 2 tablespoons of all-purpose flour to the mixture

  6. Pour in 2 large eggs and break up the yolk

  7. Season with salt, black pepper, and garlic and herb seasoning

  8. Mix all ingredients together until well combined

  9. Place tomato slices evenly spaced in a pan on medium-low heat

  10. Pour egg mixture into each tomato slice

  11. Cover with a lid and cook for a couple of minutes

  12. Flip the patties over and cook for another couple of minutes

  13. Transfer to a plate and garnish with fresh parsley

  14. Serve and enjoy
