Wash and peel potatoes.
Slice potatoes thinly and evenly.
Boil potatoes until slightly tender.
Drain using a colander.
Slice onions thinly.
Heat butter and oil in skillet.
Add onions and cook until golden.
Stir in garlic and cook one minute.
Add potatoes to skillet carefully.
Cook until potatoes turn golden brown.
Season with salt and black pepper.
Garnish with chopped fresh parsley.
Serve warm in a dish.
