  1. Make the coffee

  2. Separate the egg yolks and whites

  3. Mix the 5 egg yolks with 5 spoons of sugar and the mascarpone

  4. Whip the 2 egg whites with a pinch of salt until stiff

  5. Gently fold the whipped egg whites into the yolk-mascarpone mixture

  6. Dip the savoiardi biscuits in the coffee and arrange in a dish

  7. Spread the cream mixture over the biscuits

  8. Add another layer of biscuits and cream

  9. Top with cocoa powder

  10. Refrigerate before serving
