Make the coffee
Separate the egg yolks and whites
Mix the 5 egg yolks with 5 spoons of sugar and the mascarpone
Whip the 2 egg whites with a pinch of salt until stiff
Gently fold the whipped egg whites into the yolk-mascarpone mixture
Dip the savoiardi biscuits in the coffee and arrange in a dish
Spread the cream mixture over the biscuits
Add another layer of biscuits and cream
Top with cocoa powder
Refrigerate before serving
