Add the raw spinach, pasta flour, water and salt to a food processor. Blend until a dough forms.
Work the dough on a floured surface for 20 seconds, just until it comes together.
Using kitchen scissors, cut the dough into gnocchi directly over boiling salted water. Cook for 2 minutes, or until the gnocchi floats to the surface of the water.
For the sauce, heat olive oil and butter in a frying pan. When hot, reduce the heat and cook the onion and garlic until tender.
Drain the gnocchi and toss it in the sauce for 3 minutes. Season with black pepper and serve with grated parmesan if you like.
