Preheat your oven to 220°C/200°C Fan. Line a very large baking tray with parchment paper and set aside. Cut the peeled potatoes into thick wedges and place into a bowl. Add the wedges and the rest of the chip ingredients together and ensure you have tosses everything together so it is evenly coated. Place the seasoned wedges onto the prepared baking tray and roast for 35-38 minutes until golden and crispy. You want to turn them around 20 minutes in.
Fry the gammon steaks in a very hot frying pan with a drizzle of olive oil for 3 minutes a side on a medium heat. Once browned on both sides, place onto a plate and cover in foil to rest. Fry the eggs in the gammon fat for 1.5/2.5 minutes and season with flaked salt and black pepper.
Place all the ingredients together onto a plate and serve with tomato sauce or HP/ Brown sauce.
