Dice the cucumbers into small pieces, making sure they're as uniform as possible.
Dice the tomatoes and the red onion, again, keeping them uniform.
Toss the diced cucumbers, tomatoes, and onions into a large salad bowl. Then add a handful of finely chopped fresh mint and 2 super finely minced garlic cloves.
Squeeze the juice of 1 large lemon over the ingredients and add olive oil, a few pinches of sea salt, dried mint, and freshly ground pepper.
Give everything a really good mix, and taste. Adjust to taste if necessary. I almost always add a bit more salt, but you do you!
Serve as a side or top it with your favorite protein.
