Preheat oven to 400°F.
Thaw & drain spinach thoroughly (use a strainer & paper towel to absorb excess liquid).
In a large bowl, mix together artichoke hearts, spinach, Greek yogurt, cottage cheese, 1 cup of mozzarella, ¼ cup Parmesan, & seasonings.
Spray a 2-cup ramekin or small baking dish with avocado oil spray. Pour 1 cup of the mixture into each ramekin.
Sprinkle extra Parmesan & mozzarella on top.
Bake at 400°F for 25–30 min, until golden & bubbly.
Broil on high for 2–3 min for a crispy top! Be careful not to burn it!
