Loaded Potato Skins
  1. Pre-heat oven to 400°F

  2. Clean potatoes and slice to desired thickness using a mandoline or knife

  3. Soak sliced potatoes in cold water for 15-20 minutes

  4. Lay potatoes out on paper towels and dry for a few minutes

  5. Lay potatoes out on sheet pan lined with parchment paper

  6. Brush potatoes with melted butter and season both sides with salt and pepper

  7. Bake for 30 minutes, turning halfway if desired

  8. Remove from oven and top each slice with cheese, chopped bacon, and green onions

  9. Bake for an additional 5-10 minutes

  10. Serve with sour cream for dipping
