Start by removing the sourdough pizza dough from the fridge a couple hours before you want to make the pizzas.
Preheat your oven to convection 475F and flour 2 round or square baking sheets.
Once the dough is room temperature and nice and soft, cut it into 2 equal size pieces.
Using your hands, gently stretch each pieces of dough into your desired pizza shape. DO NOT FLOUR YOUR COUNTER.
Using two sets of hands, gently lift the shaped pizza dough onto the prepared pans.
Next, stir together the softened butter, garlic and rosemary until smooth. Spread a couple tbsps of this butter over each pizza crust.
Then, layer on the prosciutto, brie cheese, apples and red onion.
Bake the pizza for 15-20 minutes or until the edges are nicely golden and the cheese is melty and bubbly.
Finally, remove the pizza from the oven, top with a generous drizzle of hot honey and some more fresh rosemary.
Slice each pizza into 8 pieces and enjoy!
