Handkerchief Pasta
  1. In a rondeau over medium-high flame, heat oil and sauté meats until browned, breaking apart clumps.

  2. Add garlic and mirepoix and season with salt.

  3. When mirepoix softens, deglaze with wine and add pepper flakes, black pepper, and bouquet garni.

  4. Simmer until alcohol cooks out, about 10 minutes.

  5. Add milk and simmer until meat is tender, about 45 minutes.

  6. Add cream and simmer 10 minutes more.

  7. Adjust seasoning, remove from heat, discard bouquet garni, and cool completely.

  8. Cover and chill.

  9. Bring a large pot of salted water to boil.

  10. Cook 4 ounces pasta until al dente; drain.

  11. In a sauté pan, gently reheat bolognese.

  12. Add cooked pasta, tossing to combine.

  13. After about 1 minute, transfer to serving bowls.

  14. Garnish with a generous blanket of cheese, herbs, and pepper.
