Heat oil in large saucepan add ancho chili, onion & garlic, cook over low/medium heat for 5 minutes
Add the other chilies & spices, cook for another 5 minutes
Add tomatoes, vinegar & water. Turn up heat to simmer for 20 minutes
Take off heat and cool before putting sauce in blender, blend on high then put mixture through fine mesh strainer back into saucepan
Keep ½ cup aside in flat bowl to dip tortillas into. Add mushrooms or whatever to saucepan and cover & heat for 30 minutes
Dip tortillas in sauce & then fry tortilla, flip tortilla & assemble the goodness in the frying pan.
