Spread ⅔ cup peanut butter onto a parchment lined 8x8 pan and freeze until set.
Preheat the oven to 350ºF.
Combine 2 eggs, 1 cup coconut sugar, ½ cup melted high quality butter or coconut oil, and 1 tsp vanilla extract.
Fold in ⅔ cocoa powder and ½ cup oat flour.
Spread half of the batter into a parchment lined 8x8 pan.
Top with the set peanut butter.
Top with remaining batter.
Chop peanut butter cups of choice and sprinkle onto batter with extra chocolate chips.
Bake for 25-28 minutes.
Cool and slice.
