In a small bowl, combine the peanut butter, honey, vanilla, salt, and cinnamon, and stir to combine. Set aside
Add the dates and water to a food processor and process until they become a chunky paste. Set aside.
In a large bowl, add the oats, flax seeds, cranberries, cashews, pistachios and shredded coconut, and toss well to combine. Then, add in the date paste and the peanut butter/honey mixture, as well, and using a spatula, mix everything together until very well combined. The mixture will be sticky.
Roll the mixture into balls and place onto a parchment-lined baking sheet. Rolling is much easier when you wet your hands.
Once they all are rolled, place them in the fridge to set up and firm up for 30 minutes.
Meanwhile in a bowl set over a pot of simmering water, combine the chocolate and oil. The heat of the simmering water will melt the chocolate until nice and smooth.
To coat the energy bites, dip the balls into the melted chocolate halfway and then place on the baking sheet. I let them sit on the counter until the chocolate hardens. Sprinkle with a little course salt and store in the refrigerator.
