Start by preparing the chicken breasts. Flatten them with a meat mallet or rolling pin, then cut each one in half to create four pieces of chicken.
Season the chicken breasts with season salt and pepper on both sides, pressing the seasoning onto the chicken.
In three separate bowls, prepare the coating ingredients. In one bowl, add 2 cups of flour. In another bowl, whisk 3 eggs. And in the third bowl, crush 2 cups of corn flakes until they're finely crushed.
Dredge each chicken breast in the flour, then dip it in the egg mixture, and finally, coat it in the crushed corn flakes.
Spray both sides of the coated chicken breasts with cooking spray, and place them in the basket of your air fryer. Air fry the chicken at 350 degrees for about 15 minutes, or until the internal temperature of the chicken reaches 165 degrees.
While the chicken is cooking, prepare the dressing. Mix together ⅓ cup mayonnaise, ⅓ cup ketchup, 1 tbsp yellow mustard, 1 tbsp sweet pickle relish, 1 tbsp prepared bbq sauce, and salt and pepper to taste in a small bowl.
Toast the buns, and spread some of the dressing onto each side of the bun. Top with the cooked chicken, sliced tomatoes, lettuce, pickles, or any other toppings you prefer.
Serve the sandwiches with your favorite sides and enjoy!
