Marinating
Add boneless chicken thigh, gochujang paste, soy sauce and the rest of marinating ingredients in a large plate bowl.
Gently stir to mix using the spoon. Cover it and set aside for 15 minutes to help the chicken absorb the flavor.
Cooking the Dakgalbi
Add vegetable oil to a large round pan. Once hot, add chopped onion. Stir till it turns translucent
Add sliced cabbage to the pan. Mix to stir
Add the marinated chicken into the pan and gently stir for few minutes.
Add the sliced carrot. Give a quick stir and lower the heat to simmer for 15 minutes to reduce the sauce.
While simmering, add the spring onion stalk (cut in lengthwise) and gently mix to combine
Once there is less sauce, move the marinated chicken and vegetables to the right and left sides. Make a space in the center
In that center, topped with mozzarella cheese. Before turning off the heat, wait for few minutes till it has fully melted.
Serve with rice or instant noodle.
