Instructions
Prepare your lentils. Use the cooking method on the package, or:

Preparing the Picadillo
Heat a generous drizzle of oil with a little butter in a large pan over medium heat.
Add the mushrooms and cook until deeply golden and slightly crispy.
Meanwhile, make the salsa in a separate pan.
Make the Salsa
Heat 2 tablespoons oil in a pan over medium-high heat.
Add tomatoes, onion, garlic, and serrano (if using).
Cook, turning occasionally, until everything is charred on all sides and softened.
Transfer to a blender with:
Blend until smooth.
Finish the Picadillo
Return to the mushrooms. Once golden, add the diced onion and sauté until translucent.
Stir in the chopped carrots.
Add the cooked lentils (if homemade, don’t include extra broth).
Pour in the salsa and season with a good pinch of salt.
Mix everything together and simmer on medium-low heat for about 12 minutes.
Prepare the Tacos
Heat a thin layer of oil in a skillet over medium heat.
Lightly warm tortillas so they’re pliable.
Fill each tortilla with picadillo mixture, fold in half, and place in the pan.
Fry until crispy and golden on both sides.
Transfer to a paper towel-lined plate.
Preheat oven to 400°F.
Lightly brush both sides of tortillas with oil.
Fill and fold tacos, placing them on a baking sheet.
Bake 15–20 minutes, flipping halfway, until crispy and golden.
Option 1: Shallow Pan-Fried (crispy + traditional)
