  1. Prick the eggplant with a fork

  2. Add olive oil and massage the eggplant

  7. Dip in beaten eggs

  10. Cook in the air fryer at 190°C / 374°F for 15 minutes, turning halfway through cooking

  11. Mix yogurt, lemon juice, olive oil, parsley, salt and black pepper to make the sauce

  12. Serve eggplant with the yogurt sauce
