Prick the eggplant with a fork
Add olive oil and massage the eggplant
Cook in the Air Fryer at 190°C / 374°F for 20 minutes
Check the cooking, it must be soft
Season both sides with salt and black pepper to taste
Coat with flour
Dip in beaten eggs
Coat with breadcrumbs and parmesan cheese
Spray with oil on both sides
Cook in the air fryer at 190°C / 374°F for 15 minutes, turning halfway through cooking
Mix yogurt, lemon juice, olive oil, parsley, salt and black pepper to make the sauce
Serve eggplant with the yogurt sauce
