In a pot, add the milk and place this onto medium heat. Heat until the milk starts to come to a simmer. You could also just do this in your microwave.
Turn the heat off, then add the dates and baking soda into the milk, give this a mix. Cover and leave aside for 10 minutes.
In the meanwhile, brown the butter. So in a pot or pan, add the butter. Place this onto medium heat and heat, whiles constantly stirring, until the butter turns a golden brown colour.
Pour this into a large bowl, then leave aside to cool down.
After the dates have soaked for 10 minutes, use a food processor to blend this until you get a smooth mixture. Leave this aside.
Once your brown butter has cooled down, whisk both sugars and vanilla into it. It's okay for the butter to be a little warm, we just don't want it to be hot.
Add the date mixture into this and whisk.
In a small separate bowl, mix together the flour, salt and baking powder.
Add this into the large bowl, along with the chocolate. Mix everything together until a dough forms and you can no longer see any flour.
Get a 100g piece of this dough and push a soft caramel into the centre of this, then roll this into a ball. Make sure the cookie dough is completely covering the caramel.
Place this onto a plate or tray.
Repeat until you have used all of your dough. Then leave these cookie dough balls in your freezer for 30 minutes.
About 10 minutes before you are ready to bake the cookies, pre-heat your oven to 170c. We are going to bake these cookies at a lower temperature for a slightly longer time.
Get 2 large baking trays and line them with baking paper. Or you can use one tray, and bake the cookies in batches instead.
After the cookie dough balls have chilled for 30 minutes, place them onto your lined baking trays. Make sure to leave gaps between them so they have room to spread.
Bake for around 20-25 minutes. They will seem soft in the centre, but the edges will be set.
Once baked, I sprinkled some flaky salt on top of them. But this is optional.
Let them set up on the tray for at least 10 minutes before trying to pick them up. But then you can enjoy!
