In a large bowl, combine the corn kernels, flour, vegan cheddar cheese shreds, scallions, sugar, baking powder, salt, and garlic powder. Add the non-dairy milk and mix until a thick batter forms. Set aside.
Coat the bottom of a large frying pan or skillet with vegetable oil and warm the oil over medium heat until hot (about 350F). Get a wire rack or a paper towel-lined plate ready for the finished fritters.
Scoop about 4 tablespoons (¼ cup) of batter onto the hot pan, forming the fritter into a circular shape (this doesn’t have to be perfect!). Cook until the fritters are golden brown on the first side, about 2-3 minutes. Flip and cook on the second side for an additional couple of minutes until browned and cooked through.
Transfer the cooked fritters to a wire rack or paper towel-lined plate and immediately sprinkle with salt for extra flavor.
