Prepare the Cabbage and Pork:
Separate and clean the cabbage leaves.
Slice the pork thinly if it's not already sliced (you can often buy thinly sliced pork belly or pork loin at the store).
Layering the Cabbage and Pork:
Lay a cabbage leaf flat and place a slice of pork on top.
Stack another cabbage leaf on top, followed by another slice of pork.
Repeat the process until all your cabbage and pork are layered in alternating rows.
Once you have layered all your cabbage and pork, cut the stack into sections that can fit vertically into your pot. The layers should be visible from the top.
Assembling the Hot Pot:
Place the layered cabbage and pork pieces vertically in the pot. Pack them tightly so they don’t unravel.
Pour in the chicken bone broth and add a little salt, ginger slices, and some green onions.
Cooking:
Heat the pot on medium heat and bring the broth to a simmer.
Cover the pot and let it cook for 15-20 minutes until the cabbage is tender and the pork is fully cooked.
Final Seasoning:
After cooking, drizzle the soy sauce and mirin (or miso if using) over the top for flavor.
Taste the broth and adjust seasoning with more salt or soy sauce if needed.
Serving:
Serve the Mille-Feuille Nabe straight from the pot. You can dip the cabbage and pork in additional sauce or enjoy it as is.
Tips:
You can add other vegetables like mushrooms or tofu to the pot.
Serve with rice for a complete meal.
