Slice the sweet potato in half lengthways and season with flaky salt.
Place cut side down on a lined baking tray and bake at 220°C (425°F) for around 40 minutes, or until soft and caramelised.
While the sweet potato cooks, brown the beef mince in a frying pan and season to your liking.
Remove the sweet potato from the oven and place both halves into a bowl.
Use a fork to gently smash the sweet potato flesh to create a base.
Top with the cooked beef mince, mozzarella, tomato, onion, jalapeños and avocado.
Finish with lime juice and a sprinkle of flaky salt.
