Soften potatoes: Wrap potatoes with plastic wrap and microwave at 600w for 4-6 minutes. Using kitchen paper, remove the skin of potatoes.
Make soft boiled eggs: In a pot, Add water enough to cover 4 eggs completely. Bring to a boil. Carefully add eggs in a pot and cook for 6 minutes. Take them out to the ice water and leave for about 5-10 minutes.
Slice cucumber and add a bit of salt and leave it for about 5 minutes to squeeze out the water.
Make crispy bacon: Cut bacon and cook in a pan until crispy.
Make dressing in a bowl: Mix yogurt, mayonnaise, mustard, milk, black pepper.
In a dressing bowl, Add soft boiled eggs, softened potatoes, cucumber, crispy bacon.
Smash potatoes and boiled eggs. Gently combine everything.
Topped with soft-boiled egg and sprinkle some black pepper.
