  1. Dice the onion, garlic and ginger and fry on a low light for 5 minutes

  2. Separately fry your seeds for 2 minutes

  3. Mix together with your dry spices

  4. Wash and add your lentils

  5. Mix together and infuse on a medium heat for 3 minutes

  6. Chop and add your fresh tomatoes and add enough boiling water to cover it

  7. Add 1 tin of coconut milk

  8. Leave to simmer for about 25 minutes adding a little more water if it starts to dry out

  9. Top with fresh coriander
