Gently pat the salmon fillets with paper towels.
In a bowl, combine Parmesan cheese, panko breadcrumbs, olive oil, mayonnaise, garlic, parsley, lemon zest, lemon juice, salt, and pepper. Stir until the mixture resembles a thick, slightly crumbly paste.
Place the salmon fillets skin-side down on the baking sheet. Evenly press the Parmesan mixture on top of each fillet.
Bake for 12–15 minutes, depending on thickness. The salmon should flake easily with a fork, and the topping should turn golden and crisp. If you like an extra crunchy finish, broil for the last 1–2 minutes, watching closely.
Let the salmon rest for a few minutes before serving.
