Quinoa Veggie Soup
  1. Add olive oil to a large pan and heat over medium-high heat

  2. Add carrots, onions, celery and garlic

  3. Season with salt and pepper and cook for 10 minutes, stirring occasionally, until veggies are soft

  4. Add zucchini, cannellini beans, diced tomato, quinoa and chicken broth

  5. Season with cumin and crushed red pepper

  6. Bring to a boil and boil for 15 minutes

  7. Add kale and stir

  8. Add lemon and rotisserie chicken (optional) and stir again

  9. Top with some extra ground black pepper
