Preheat your oven to 350°F (175°C). Season the chicken pieces with salt and pepper.
In a large skillet, heat a little olive oil over medium heat. Sauté the onion and garlic until softened.
In a large bowl, combine the sautéed onions and garlic, chicken, soups, chicken broth, milk, rice, mixed vegetables, and parsley. Season with salt and pepper to taste.
Pour the mixture into a 9x13-inch baking dish. Cover with foil and bake for 45-55 minutes, or until the chicken is cooked through and the rice is tender.
For a slightly crispy top, remove the foil in the last 5-10 minutes of baking and broil on high until golden brown.
