Preheat oven 400 degrees. Brush the dish with olive oil. Place fillets in dish and brush generously with olive oil. Season well with salt and pepper.
Crumb Ritz cracker in pops processed. Stir in panko, parsley, garlic and lemon zest. Pour in melted butter and combine well.
Remove fish from oven. Pour white wine directly over fillets. Squeeze lemon over fillets. Pile crumbs onto each fillet. Don’t worry about crumbs in the sauce, it adds to the body of the sauce.
Return to oven for exactly 12 minutes. Serve
