Meat:

vegetarian:
Brown the Italian sausage thoroughly in a large pot.
Add the diced onions and cook until softened, about 5–7 minutes.
Add garlic and cook for about 30 seconds.
Add tomato paste and cook for 1–2 minutes.
Add crushed tomatoes, chicken broth, Italian seasoning, red pepper flakes, salt and pepper.
Bring to a simmer and cook for 30–40 minutes.
Add the white kidney beans during the final 10–15 minutes, just to heat them through while keeping them intact.
Stir in the cream and Parmesan toward the end.
Taste and adjust seasoning.
Vegetarian method:
Brown the vegetarian Italian sausage in a little olive oil until nicely browned.
Add onion and cook until softened.
Add garlic and cook for about 30 seconds.
Add tomato paste and cook for 1–2 minutes.
Add crushed tomatoes, vegetable broth and seasonings.
Simmer for 30–40 minutes.
Add the white kidney beans during the final 10–15 minutes.
Stir in cream and Parmesan.
Taste and adjust seasoning.
For your event, don’t cook the pasta in the soup.
Bring a large pot of generously salted water to a boil.
Cook the Campanelle until just al dente, preferably about 1 minute less than the package recommendation.
Drain well.
Toss very lightly with olive oil to prevent sticking.
Keep it separately from the soup.
Combine the ricotta, Parmesan, mozzarella and parsley.
Keep refrigerated until service.
For each 1½-cup serving, aim for: ¼ cup cooked Campanelle, approximately 1¼ cups of soup, 3 tbsp ricotta topping.
Put ¼ cup cooked Campanelle into the bowl.
Ladle in enough hot soup to bring the bowl close to the 1½-cup target.
Add 3 tablespoons ricotta mixture on top.
Optional: finish with a small sprinkle of Parmesan or parsley.
