Boil potatoes for 20 minutes or until fork tender
Preheat the oven to 450 F
Drain the potatoes and arrange them on baking sheets
Using a cup with a flat bottom, smash each potato
Drizzle each with a generous amount of olive oil
Sprinkle with salt and pepper
Bake for 30 minutes, or until crispy and golden brown
Blend the cottage cheese until smooth
In a separate bowl mix together all topping ingredients (shallot, chives, blended cottage cheese, lemon juice, salt, and pepper)
Once the potatoes are done, carefully remove them from the tray with a spatula
Add a spoonful of the topping to each potato and enjoy
