High Protein Cheesy Crispy Smashed Potatoes
  1. Boil potatoes for 20 minutes or until fork tender

  2. Preheat the oven to 450 F

  3. Drain the potatoes and arrange them on baking sheets

  4. Using a cup with a flat bottom, smash each potato

  5. Drizzle each with a generous amount of olive oil

  6. Sprinkle with salt and pepper

  7. Bake for 30 minutes, or until crispy and golden brown

  8. Blend the cottage cheese until smooth

  9. In a separate bowl mix together all topping ingredients (shallot, chives, blended cottage cheese, lemon juice, salt, and pepper)

  10. Once the potatoes are done, carefully remove them from the tray with a spatula

  11. Add a spoonful of the topping to each potato and enjoy
