Banana Pecan Caramel Layer Cake
  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round pans.

  2. Whisk together flour, baking powder, baking soda, and salt in a medium bowl.

  3. Beat butter, granulated sugar, and brown sugar until light and fluffy.

  4. Add eggs one at a time, mix well, then stir in vanilla and mashed bananas.

  5. Alternate adding the flour mix and buttermilk, beginning and ending with the flour mix.

  6. Gently fold in chopped pecans for crunch.

  7. Divide batter evenly among pans, bake 25–30 minutes, until a toothpick comes out clean.

  8. Let cool 10 minutes in pans, then transfer to wire racks.

  9. Melt butter with brown sugar and cream; cool slightly, then beat in powdered sugar and vanilla.

  10. Frost each layer, top, and sides. Garnish with chopped pecans.
