Chicken Caesar Quesadilla
  1. Preheat the oven to 180 degrees celsius.

  2. Season the chicken on both sides with salt and pepper. Bake in the oven for 12 minutes.

  3. Meanwhile, grill the bacon according to packet instructions. Once cooked, roughly chop into bits.

  4. Next, toss the lettuce with 20ml of the caesar dressing, set to one side.

  5. Once the chicken is cooked, shred using two forks.

  6. Heat a pan over medium heat. Add one of the wraps, before topping with the mozzarella.

  7. Add the shredded chicken and cover with the remaining wrap.

  8. Cook for 2 minutes on each side until golden and the cheese has melted.

  9. Remove from the pan and peel back the top wrap. Add ½ the bacon along with the dressed lettuce.

  10. Cover again, before drizzling over the remaining sauce and scattering over the remaining bacon.
