Preheat oven to 400°F and cut each nori sheet into 4 squares.
Line a silicone muffin tray with nori squares.
Add 1 heaping tbsp of cooled sushi rice to each nori square and press into tray.
In a bowl, mix cubed salmon with oil, soy sauce, honey, scallions, spices, and salt.
Marinate salmon for at least 30 minutes (or up to 4 hours).
Add 4–5 salmon cubes to each muffin slot on top of rice.
Bake for 15–17 minutes; broil for 1–2 minutes for browning.
Mix Kewpie mayo, sriracha, and honey in a bowl for sauce.
Let muffins cool slightly, then top with avocado, sesame seeds, and spicy mayo.
