Preheat oven to 375°F.
Blend the cottage cheese, Greek yogurt, low-fat milk, Dijon, ½ cup cheddar, mozzarella, Parmesan, garlic powder, onion powder, smoked paprika, salt, and pepper until completely smooth.
Mix the creamy sauce with the shredded chicken and steamed cauliflower until everything is evenly coated.
Transfer to a baking dish and top with the remaining cheddar cheese.
Bake for 25–30 minutes until hot and bubbly.
Broil for 2–3 minutes until the cheese is lightly golden.
