Shrimp à la Newburg
  1. In 12" nonstick skillet, heat olive oil over medium heat.

  2. Sprinkle shrimp with ½ tsp. Old Bay seasoning. In two batches, cook shrimp, turning once, until opaque, about 2 min. Transfer to plate; cover.

  3. Coat same skillet with cooking spray. Add onion; over medium heat, cook, stirring often, until softened, 4-5 min. Add garlic; cook 30 sec. Stir in soup, clam juice, ¼ cup water and ½ tsp. seasoning. Bring to boil; reduce to medium-low.

  4. Cover; cook until onion is tender and flavors blend, about 10 min.

  5. Uncover skillet; add lemon zest and shrimp with any accumulated juices; cook, stirring, until heated through, 1 min. Sprinkle with parsley. If desired, serve over rice.
