In a large pot, heat the vegetable oil over medium heat.
Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent and the garlic is fragrant.
Add the garam masala, cumin, turmeric, red chili powder, and salt. Stir well to coat the onions.
Add the mixed vegetables to the pot and stir to coat them with the spice mixture.
Pour in the vegetable broth and coconut milk. Stir well to combine.
Bring the stew to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the vegetables are tender.
Serve the stew hot, garnished with fresh cilantro.
