Blackberry Wine Recipe
  1. Pour boiling water over blackberries to break the skins and sanitize them.

  2. Add pectolase after cooling to break down the pectin.

  3. After 24 hours, add lemon juice, sugar, and yeast.

  4. Ferment in primary for 6 days.

  5. Rack off the gross lees into a demijohn through sterilized muslin.

  6. Rack off the yeast after 6 weeks and again at 3-4 months to remove sediment.
