  1. Evening (8 PM): Mix flour, water, yeast and salt together

  2. Perform one quick stretch and fold (or two if desired)

  3. Place dough in the fridge overnight

  4. Morning (8 AM): Remove dough from fridge and let it wake up slowly on the counter

  5. Lunch time: Gently divide dough with minimal handling

  6. Let dough rest until oven reaches 450°F

  7. Preheat oven to 450°F with steam

  8. Bake on middle rack for 15-20 minutes (watch carefully) until golden and crispy
